Another Home Run
Since Kevin’s last round of bloodwork came back a little high (not alarming, not out-of-the-ordinary, just a little high), I’m now back on the low-fat, low-cholesterol bandwagon. I gave up fast food a little over a year ago, and now if I even look at the stuff, I’m miserable for days afterward. But I have to admit, I’ve become a little lax about watching the cholesterol around the house, and I’ve slid back into making “white foods” more often than I should.
So. My point. In the last few months, I’ve incorporated more and more fish into our diets. If you know anything about me, you know that I am a beef girl. Once, maybe even twice a week. I am in NO WAY a fish girl. But….I tried out a recipe tonight for baked, breaded fish sticks. Yep. That’s what I said: fish sticks. I cut up the tilapia, breaded it with Panko, and threw it in the oven. And. It. Was. DELICIOUS. A little brown rice, some green beans fresh from the garden, a big salad (yes, with fat-free dressing), and dinner was on the table in about 20 minutes. Good and good for you!

We are in the same boat! My bloodwork came back high as well…Thank God for Crestor!!!!!
