De-Licious!
Tonight we had grilled jerk chicken skewers, whole wheat couscous with cilantro, parsley, garlic, and lime juice, and cucumber and mango salsa. All told, the entire meal was under 300 calories, had hardly any fat, and almost no cholesterol. Also? It was high in vitamins, so that was a bonus. All in all, it was absolutely delicious, and it proves once again that you can eat well and eat healthy at the same time. I’m pretty sure this meal is going to become a summer staple in our house. And next time? I’m totally taking a picture, because it made a really pretty plate.

Sounds delish! I think the grill makes it so easy to cook scrumptious healthy meals.
